Chicken, Mushroom and Asparagus Stir-Fry

Quick and flavorful chicken stir-fry with mushrooms, asparagus, and rice. Ideal for a speedy Asian-inspired meal.
Ingredients:
  • 1 cup uncooked regular long-grain white rice
  • 2 cups water
  • 2 tablespoons vegetable oil
  • 1 lb chicken breast strips for stir-frying
  • 1 lb asparagus spears, trimmed, cut into 2-inch pieces
  • 1 medium onion, cut into 1/2-inch wedges
  • 1 package (8 oz) sliced fresh mushrooms (about 3 cups)
  • 1/4 cup water
  • 1/2 cup stir-fry sauce
  • 1/4 cup oyster sauce
Instructions:
  • Prepare rice according to package instructions.
  • In a hot wok or 10-inch skillet, heat 1 tablespoon of oil over medium-high heat. Stir-fry chicken strips for 5 to 6 minutes until cooked through. Transfer chicken to a plate.
  • Pour the leftover tablespoon of oil into the wok. Toss in the asparagus and onion, stir-frying for 3 minutes. Follow by adding the mushrooms and stir-fry for an additional 3 minutes. Pour in water, cover, and steam for 2 to 3 minutes until the asparagus is tender.
  • In a small bowl, combine the stir-fry sauce and oyster sauce. Pour the sauce mixture into the wok with the chicken and stir-fry for another minute until heated through.
