Baked autumn fruit compote

Elevate seasonal fruits in a delicious compote.
Ingredients:
  • 3 oranges
  • 1 vanilla bean, halved lengthways
  • 2 small gala or pink lady apples, cored, cut into 1cm wedges
  • 1kg rhubarb
  • 220g caster sugar
Instructions:
  • 1. Preheat your oven to 180°C. 2. Finely peel the rind from 1 orange and cut it into small shreds in a bowl. Add the freshly squeezed orange juice to the bowl. 3. Scrape the seeds from the vanilla bean into the bowl and mix well with the orange rind and juice. 4. Add the apples, rhubarb, and sugar to the bowl, then toss everything together. 5. Peel the skin and pith from the remaining oranges, cut them into rounds, and set aside.
  • Pour the apple mixture into a non-reactive ovenproof dish. Seal it tightly with foil and bake for 30 minutes. Uncover, baste with cooking juices, add orange slices, and bake without the foil for an additional 15 minutes until the fruit is tender. Enjoy warm or at room temperature.
