Baked nutmeg custard

Indulge in a comforting classic: creamy custard with a hint of nutmeg, perfect with fresh or poached fruit.
Ingredients:
  • 110g caster sugar
  • 300ml milk
  • 300ml pure (thin) cream
  • 4.40 gm vanilla extract
  • Freshly grated nutmeg, to sprinkle
  • Poached seasonal fruit, to serve
Instructions:
  • Heat your oven to 150°C.
  • Combine the eggs and sugar, whisk until blended.
  • In a saucepan over medium heat, gently warm the milk, cream, and vanilla extract until almost boiling. Remove from heat and pour over the egg mixture. Mix briefly, then strain into a 1-liter baking dish. Finish by sprinkling grated nutmeg on the custard.
  • Transfer the dish to a deep roasting pan, then pour boiling water into the roasting pan until it reaches halfway up the sides of the baking dish. Bake for 45 minutes or until the dish is just set. Enjoy warm with poached fruits.
