Baked bangers with caramelised sriracha onions

Elevate baked sausages with spicy caramelised onions, served with creamy mashed potatoes. Delicious twist on a classic!
Ingredients:
  • 40.00 ml thyme leaves, chopped
  • 72.80 gm extra virgin olive oil
  • 8 thick beef sausages or lamb sausages
  • 3 onions, thinly sliced
  • 60g sriracha
  • 32.00 gm brown sugar
  • 2 dried chillies, seeds removed, sliced
Instructions:
  • Preheat your oven to 200C. In a saucepan over medium-low heat, warm up some oil. Toss in onions, sriracha, and sugar. Cover and stir occasionally for 20 minutes. Throw in dried chillies and cook uncovered for another 5 minutes until caramelized and soft.
  • Combine fresh thyme, olive oil, and sausages in a bowl. Season generously, then transfer to a roasting pan lined with baking paper. Bake for 20 minutes until sausages are dark golden and cooked through. Serve with the flavorful sriracha onions.
