Sausages with onion and mustard gravy

Create a delicious budget-friendly meal with sausages and mash using creativity and planning.
Ingredients:
  • 8 thick beef sausages
  • 20g butter
  • 3 brown onions, thickly sliced
  • 20.00 ml red wine vinegar
  • 30.00 ml plain flour
  • 125ml red wine
  • 375ml beef stock
  • 23.40 gm wholegrain mustard
  • 11.80 gm Dijon mustard
  • Mashed potato, to serve
  • Steamed peas, to serve
Instructions:
  • Preheat oven to 100°C. Brown the sausages in a large frying pan over medium heat for 8 minutes, turning occasionally, until cooked through. Keep warm in the oven on a tray.
  • Prepare the mustard gravy by melting butter in a frying pan over medium-low heat. Cook onion and garlic until soft and caramelized, about 15 minutes. Stir in sugar and vinegar until well combined, then add flour and wine, bringing to a boil. Pour in beef stock, stirring until sauce thickens. Finish by adding wholegrain and Dijon mustard, then remove from heat.
  • Divide mashed potatoes onto serving plates. Arrange sausages on top. Drizzle with the savory onion gravy and serve promptly with a side of steamed peas, if preferred.
