Sausages with tomato, red onion and mashed potato

Elevate your meal with quick and delicious sausages and creamy mashed potatoes in just half an hour.
Ingredients:
  • 4 medium (about 800g) brushed or Pontiac potatoes, peeled, roughly chopped
  • 8 (about 700g) pork Old English sausages
  • 2 medium red onions, peeled, thinly sliced
  • 1 400g can whole peeled tomatoes, undrained, roughly chopped
  • 1 tsp dried oregano leaves
  • Salt & ground black pepper, to taste
  • 20g (1 tbsp) butter or margarine
  • 60 mls (1/4 cup) milk
Instructions:
  • Boil potatoes in a pot of salty water for 12-15 minutes until tender, then drain. (Check microwave option for quicker prep.)
  • Heat a large non-stick frying pan over medium heat, cook the pork sausages until browned, about 4-5 minutes. Drain on paper towel and set aside. Remove excess fat from pan, then add garlic and onions and cook until onions are tender, about 4-5 minutes. Stir in undrained tomatoes, oregano, salt, and pepper.
  • Reunite the sausages in the pan, cover and gently simmer for 6-7 minutes, stirring occasionally, until fully cooked. In the meantime, mix potatoes with butter or margarine, milk, salt, and pepper, then mash until creamy. Serve sausages with tomato and onion sauce alongside the fluffy mashed potatoes.
