Bacon-wrapped beef sausages with tomato salsa recipe

Whip up this festive finger food for your Christmas cocktail party with ease!
Ingredients:
  • 1/2 red onion, finely chopped
  • 1 small red capsicum, seeded, finely chopped
  • 300g vine-ripened tomatoes, finely chopped
  • 10.00 gm caster sugar
  • 2 x 360g pkts Sausages in Bacon
Instructions:
  • Preheat the oven to 200°C and line a baking tray with parchment paper.
  • In a small saucepan over medium heat, warm the oil. Add onion, capsicum, and garlic, then cook and stir for 5 minutes until onion softens. Stir in tomato and sugar, bring to a boil, then reduce heat and simmer for 15 minutes until the sauce thickens. Remove from heat, stir in vinegar, and season to taste.
  • Place the sausages on the lined tray and bake for 15 minutes, turning occasionally, until they are golden brown and cooked through.
  • Place the sausages on a decorative platter and accompany them with zesty tomato salsa.
