Quick and simple recipe ideal for a cozy Friday dinner.
Ingredients:
  • 4 (about 600g) sebago (washed) potatoes, peeled, quartered
  • 125ml (1/2 cup) milk
  • 40g butter, softened
  • Salt & freshly ground black pepper
  • 8 thick beef sausages
  • 1 large red onion, halved, thickly sliced
  • 20.00 ml plain flour
  • 60ml (1/4 cup) dry red wine
  • 330ml (1 1/3 cups) beef stock
  • 62.50 ml loosely packed coarsely chopped fresh continental parsley
  • Steamed broccolini, to serve
  • Steamed baby (Dutch) carrots, to serve
Instructions:
  • In a large saucepan, cover the potato with plenty of cold water and bring to a boil over high heat. Reduce to medium-high heat, simmer partially covered for 15 minutes until tender. Drain and return to the pan, then heat on low for 2 minutes until dry. Remove from heat and mash until smooth using a potato masher or fork.
  • In a saucepan, gently simmer the milk until just hot. Slowly mix the warm milk and butter into the potato, mashing until creamy. Season with salt and pepper to taste.
  • Heat half of the oil in a large heavy-based frying pan over medium-high heat. Add the sausages and cook on medium heat, turning occasionally, for 8 minutes until fully cooked. Place on a plate and cover with foil to keep warm.
  • In the same pan, heat the remaining oil over medium heat. Cook the onion for 3 minutes until soft. Add flour and cook for 1 minute until combined. Remove from heat, gradually stir in wine and stock. Return to heat and cook for 5 minutes until slightly thickened. Stir in parsley, add sausages, and coat in the gravy.
  • Divide the mashed potatoes onto individual serving plates. Top with sausages and delicious gravy. Include broccolini and carrots on the side, if preferred. Enjoy your scrumptious meal!
