Spicy Asian buttery barramundi topped with zesty homemade salsa.
Ingredients:
  • 100g butter, softened
  • 2 cloves garlic, crushed
  • 2cm piece ginger, finely grated
  • 4x 200g pieces barramundi, skin on, pin-boned
  • 2 large bunches broccolini, trimmed
  • 18.20 gm extra virgin olive oil
  • 100g green beans, trimmed, thinly sliced
  • 1/2 small red onion, finely chopped
  • 1 clove garlic, crushed
  • 2 limes, zested, juiced
  • 20.00 ml finely chopped mint
  • 20.00 ml finely chopped coriander
  • 14.00 gm Thai red curry paste
  • 2 long red chillies, seeded, finely chopped
  • 60ml (1/4 cup) vegetable oil
Instructions:
  • Mix all ingredients together in a bowl, then add a pinch of salt and pepper to season.
  • Preheat oven to 200C. Melt butter in a small saucepan over low heat with garlic and ginger until fragrant.
  • In an ovenproof dish, lay the barramundi with the skin side facing up. Drizzle with the butter mixture and season generously. Bake for 10 minutes or until perfectly cooked. Let it rest for 5 minutes before serving.
  • Cook broccolini in a pot of boiling salted water for 4 minutes until tender, then drain. Toss in a bowl with extra virgin olive oil, season, and coat evenly.
  • Plate the barramundi, generously spoon salsa over the top, and serve alongside the broccolini.
