Crispy baked black bean and spinach flautas with salsa and Monterey Jack cheese - a delicious and satisfying Mexican vegetarian dish.
Ingredients:
  • 1 serving cooking spray
  • 10 (6 inch) corn tortillas, or more to taste
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 cups chopped fresh spinach, or more to taste
  • 1 (16 ounce) jar black bean and corn salsa
  • 0.5 cup shredded Monterey Jack cheese, or to taste
  • 1 (6 ounce) container Greek yogurt
Instructions:
  • Preheat oven to a toasty 350 degrees F (175 degrees C) and give the baking sheet a quick spritz with cooking spray.
  • Warm tortillas individually in a small skillet over medium heat until soft, about 30 seconds per side.
  • Coat both sides of a tortilla with cooking spray. Fill the middle with 1 tablespoon black beans, spinach, 1 teaspoon cilantro, 1 tablespoon salsa, Monterey Jack cheese, and cumin. Roll up the tortilla and place seam-side down on a baking sheet. Repeat for the rest of the flautas and sprinkle with more cheese.
  • Bake in the preheated oven for 20-25 minutes until crispy. Serve with a dollop of Greek yogurt.
