Baked cannellini beans with sage and garlic

Craft an outdoor Italian feast.
Ingredients:
  • 250g cannellini
  • 1 garlic bulb, halved into two rounds
  • 1 bunch sage, leaves picked
  • 1 vine-ripened tomato (with vine attached)
  • 125ml olive oil
Instructions:
  • The following day, preheat your oven to 200°C (400°F for woodfired ovens). Drain the beans and combine with garlic, sage, tomato, and oil in a baking dish. Add water to cover the beans, then cover the dish with foil, ensuring to cut a small hole in the center for steam to escape.
  • Cook in the oven for 1 hour 30 minutes or in the center of a wood-fired oven for 45 minutes until the liquid evaporates and the beans are tender. Season, drizzle with extra olive oil, cool, and serve.
