Overnight breakfast casserole ready in 20 minutes - perfect for a lazy morning!
Ingredients:
  • 1 cup packed brown sugar
  • 6 tablespoons butter or margarine
  • 1/3 cup whipping (heavy) cream
  • 1 tablespoon light corn syrup
  • 3 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 8 (3/4-inch-thick) diagonal cut slices French bread
Instructions:
  • Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. In a 2-quart saucepan, combine topping ingredients and cook over medium heat, stirring constantly until smooth. Be careful not to boil. Transfer the smooth topping into the baking dish.
  • In a shallow bowl, whisk together eggs, milk, vanilla, and salt. Dip bread slices into the mixture, ensuring they soak up all the goodness. Place the bread over the topping in the dish, cover, and refrigerate for at least 8 hours or overnight.
  • Preheat oven to 400°F. Uncover baking dish and bake for 20-25 minutes until bubbly and toast is golden brown. Let it stand for 3 minutes before serving.
  • Invert a large heatproof serving platter over the baking dish, then flip both over together. Remove the baking dish and scrape any extra caramel topping onto the toast. Serve hot.
