Indulge in Chef John's irresistible cheesy cauliflower fries with zesty ketchup dip - a party favorite!
Ingredients:
  • 2 (2.5 pound) heads cauliflower
  • 1 tablespoon kosher salt
  • 1 tablespoon olive oil, divided, or as needed
  • 2 large eggs
  • 4 cloves peeled garlic, crushed fine
  • 0.5 teaspoon freshly ground black pepper
  • 0.25 teaspoon dried oregano
  • 0.125 teaspoon cayenne pepper
  • 4 ounces shredded Cheddar cheese
  • 1 ounce finely grated Parmigiano-Reggiano cheese, plus more for topping
Instructions:
  • Prepare the cauliflower by cutting it into medium-sized florets. Pulse the florets in a food processor, working in batches, until they resemble rice grains. Transfer the cauliflower rice to a large pot and sprinkle with kosher salt. Cook and stir over medium-high heat until the mixture is wet and soft for about 30 minutes, adjusting the heat if it starts to brown. Once done, remove from heat and let the cauliflower cool.
  • In batches, place the cauliflower on a clean cotton towel. Gather the edges, twist the towel, and press out excess liquid. You should have roughly 3 1/2 cups of cooked, squeeze-dried cauliflower for the recipe.
  • Preheat your oven to 350 degrees F (175 degrees C). Line a large rectangular baking dish with parchment paper, ensuring the edges extend for easy lifting, then gently brush with olive oil.
  • In a large mixing bowl, crack the eggs and combine them with garlic, black pepper, oregano, and cayenne pepper. Mix until well combined. Add cauliflower, shredded Cheddar cheese, and grated Parmigiano-Reggiano, then mix everything thoroughly. Transfer the mixture to the prepared baking dish and press it down evenly.
  • Bake in the oven until beautifully golden for about 1 hour. Let it cool to room temperature, then cover and refrigerate until fully chilled for 3 to 4 hours.
  • Preheat the oven to 400 degrees F (200 degrees C) while lining a baking sheet with a silicone mat and lightly oiling it.
  • Carefully remove the chilled cauliflower from the pan. Cut it in half lengthwise and then slice each half crosswise into thin "fries," approximately 1-inch wide. Place the fries on the prepared mat ensuring they are not touching. Lightly brush them with olive oil and finish by dusting them with grated Parmigiano-Reggiano cheese.
  • Place in the oven already preheated and bake until a deep golden brown, about 20 to 25 minutes. Let cool slightly before serving.
