Butter chicken flavored baked cauliflower topped with gooey cheese, perfect for a delicious family meal.
Ingredients:
  • 200g barbecued chicken meat, finely chopped
  • 50g (2 ½ tablespoons) butter chicken paste
  • 80.80 gm thickened cream
  • 1kg head cauliflower, leaves removed
  • 9.20 gms vegetable oil
  • 50g (½ cup) pre-grated 3 cheese blend
  • Pkt roti bread, cooked (optional)
Instructions:
  • First, preheat your oven to 200°C. Then, mix together the chicken, 1½ tablespoons of butter chicken paste, and cream in a small bowl.
  • Prepare the cauliflower by removing the core and large inner stalks, being careful to keep the florets intact. Brush the florets with oil and the remaining butter chicken paste. Place the cauliflower in a small roasting tray cavity-side up. Fill the cavity with the chicken mixture, using a spoon to ensure it is fully stuffed. Add 60ml (¼ cup) water to the tray. Cover with foil and roast for 45-50 minutes. Remove foil, sprinkle with cheese blend, and continue roasting for 15-20 minutes until the cheese is golden and a knife inserted meets no resistance.
  • Cut the dish into 4 wedges and elegantly pair it with roti on the side, if desired.
