Baked chicken with sauerkraut, Swiss cheese, and Thousand Island dressing - a twist on a classic Reuben sandwich!
Ingredients:
  • 6 skinless, boneless chicken breast halves
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 1 (16 ounce) can sauerkraut, drained and pressed
  • 4 slices Swiss cheese
  • 1.25 cups thousand island salad dressing
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Heat your oven to 325 degrees F (165 degrees C).
  • Arrange the chicken in a lightly greased 9x13 inch baking dish. Season with salt and pepper, then layer sauerkraut and cheese slices on top. Drizzle with dressing and cover with aluminum foil before baking.
  • Roast in a hot oven for 90 minutes, or until the chicken is fully cooked (fork should easily go in and juices run clear). Scatter with fresh parsley before serving.
