Crispy baked chicken and cheese taquitos - fun to make, freeze well, and perfect for pleasing kids.
Ingredients:
  • Mild salsa
  • Sour cream
  • For the taquitos:
  • 2 cups (about 1 pound) cooked shredded chicken (see Recipe Note)
  • 4 ounces cream cheese
  • 1 cup (4 ounces) grated cheddar cheese
  • 4 ounces canned mild green chilis
  • 1 teaspoon mild chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 18 to 20 (6-inch) corn tortillas
  • Vegetable oil, for brushing
  • For serving:
  • Fresh cilantro
  • DAD ADD: Sriracha Cream Sauce
  • 1/4 cup sour cream
  • 1 tablespoon Sriracha hot sauce
Instructions:
  • Preheat the oven to 350°F and lightly oil a rimmed baking sheet.
  • Create the taquito mix: Combine shredded chicken, cream cheese, cheddar cheese, green chilis, and seasonings in a medium bowl. Thoroughly mix the ingredients. Adjust seasonings to taste preference, ensuring a mild and kid-friendly flavor profile.
  • Prepare the tortillas by wrapping them in pairs in between damp paper towels. Microwave on high for 20 seconds to soften them.
  • Prepare the taquitos: Spoon two generous tablespoons of the chicken filling onto each tortilla, roll tightly into cigar shapes, and place seam-side down on a lightly oiled baking sheet to prevent cracking. You should end up with 18 to 20 taquitos.
  • Bake the taquitos: Bake immediately to avoid excessive tortilla cracking. Cook for 20-25 minutes until crispy and golden. If tortillas crack badly, replace with a new one and transfer filling. A few cracks are fine; the taquitos are still delicious and easy to eat.
  • Prepare the cream sauce by mixing sour cream and sriracha. Adjust the seasoning to your taste. The sauce can be prepared ahead of time and stored in the fridge for a few days.
  • Enjoy: Serve promptly with the creamy sauce. Any remaining portions can be frozen for a month and warmed in the oven when ready to eat.
