Baked Chili with Cornmeal Crust

Delicious chili topped with baked cornbread - a comforting and flavorful meal!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 small onion, chopped (1/4 cup)
  • 1 tablespoon Original Bisquick™ mix
  • 1 tablespoon chili powder
  • 3 tablespoons water
  • 2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), undrained
  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 teaspoon salt
  • 3/4 cup Original Bisquick™ mix
  • 3/4 cup yellow cornmeal
Instructions:
  • Preheat the oven to 350°F. In a 2-quart saucepan, sauté beef and onion until beef is browned and onion is tender; drain excess grease.
  • Combine 1 tablespoon of Bisquick mix with chili powder and water in a small bowl, then mix into the beef. Add tomatoes, corn, and salt, and bring to a boil while stirring. Transfer the mixture to an ungreased 8-inch square glass baking dish or 2-quart casserole dish.
  • Blend the remaining ingredients together, then pour over the beef mixture.
  • Bake until golden brown, uncovered, for 35-40 minutes.
