Crispy coconut cayenne chicken nuggets, baked to perfection.
Ingredients:
  • 0.25 cup panko bread crumbs
  • 0.25 cup Italian-seasoned bread crumbs
  • 0.25 cup sweetened flaked coconut
  • 1 pinch cayenne pepper, or to taste
  • 1 pinch dried thyme, or to taste
  • 1 egg
  • 1 teaspoon sriracha sauce
  • 2 skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and set up a wire rack on a baking sheet with edges.
  • Combine panko bread crumbs, seasoned bread crumbs, coconut, cayenne pepper, and thyme in a food processor. Pulse until coconut is similar in size to bread crumbs, then transfer to a flat bowl or dish.
  • Combine the egg and sriracha sauce, whisking until fully blended in a separate bowl.
  • Coat chicken pieces in crumb mixture, then in egg mixture, and back in crumb mixture before placing on the prepared rack. Repeat for all chicken pieces.
  • Place in the preheated oven and bake until golden brown and crispy, approximately 20 minutes.
