Florida-inspired Cuban spiced lemon chicken baked to perfection.
Ingredients:
  • 2 (8 ounce) bone-in chicken breasts, cut in half
  • 2 bone-in chicken thighs
  • 2 chicken drumsticks
  • 1 onion, chopped
  • 0.75 cup lemon juice
  • 0.25 cup Worcestershire sauce
  • 1.5 tablespoons minced garlic
  • 0.75 teaspoon ground allspice
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon red pepper flakes
  • 1 pinch salt and ground black pepper to taste
  • cooking spray
  • 1 tablespoon vegetable oil
Instructions:
  • In a spacious bowl, combine chicken pieces with onion, lemon juice, Worcestershire sauce, garlic, allspice, onion powder, cumin, red pepper flakes, salt, and pepper. Mix until well combined. Cover and chill in the refrigerator for at least 1 hour, or preferably overnight.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give a gentle spray of cooking oil to a 9x13-inch baking dish.
  • Begin by heating oil in a large skillet. Place chicken pieces in the skillet, leaving the marinade aside in the bowl. Pan-fry the chicken until beautifully browned, approximately 5 minutes on each side. Now, transfer the chicken to the prepared baking dish and pour the reserved marinade over it.
  • Roast in the oven's warmth until the juices are clear, approximately 40 minutes.
