Baked eggs in crusty bread - a delightful breakfast treat.
Ingredients:
  • 6 eggs
  • 1 onion, diced
  • 18.20 gm olive oil, plus extra to grease
  • 1 large pita bread, split into 2 rounds, each cut into quarters
  • 200g shaved ham
  • 125.00 ml chopped basil, plus whole leaves to garnish
  • 12 cherry tomatoes, halved
Instructions:
  • Preheat oven to 180°C. Sauté onions in a frypan with oil over medium heat until soft and lightly golden, about 3-5 minutes. Remove from heat and set aside.
  • Prepare a 6-hole muffin tray by lightly oiling it. Place a pita quarter in each hole and discard the remaining 2 quarters. Evenly distribute onion, ham, basil, and tomatoes in each pita quarter. Crack an egg over the top of each one. Bake for 25 minutes or until the egg whites are set. Finish with a garnish of fresh basil.
