Savory ham and cheese breakfast bake, made with bread, tomatoes, and eggs. Perfect for feeding a group, and can be prepared in advance.
Ingredients:
  • Butter (for the dish)
  • 1 loaf sliced white toasting bread
  • 3/4 pound mild cheddar, grated
  • 8 small tomatoes, or 16 cherry tomatoes, thinly sliced
  • 1 thick slice (3/4 pound) flavorful baked ham, cut into 1/4-inch dice (About 2 1/2 cups diced)
  • 10 large eggs
  • 3 cups whole milk
  • Salt and pepper, to taste
Instructions:
  • Butter a deep 9 x 13-inch baking dish. Cut the bread slices into large triangles and arrange them to completely cover the bottom of the dish, cutting smaller pieces to fill in any gaps.
  • Layer the casserole: Start by sprinkling half of the cheese over the bottom layer of bread. Place half of the tomato slices randomly on top, then sprinkle half of the ham over top. Add another layer of bread, adjusting the size of the pieces if needed for a solid layer. Sprinkle all but 2 tablespoons of the remaining cheese, and all of the remaining tomatoes and ham on top. Finish with a third layer of bread.
  • In a bowl, vigorously combine eggs, milk, a generous pinch of salt, and pepper. Gently pour the mixture over the bread. Use your hands to saturate the bread evenly. Sprinkle the remaining 2 tablespoons of cheese on top.
  • Chill for maximum flavor: Wrap with plastic wrap or foil and refrigerate for at least 12 hours or up to 48 hours.
  • Preheat the oven to 375°F and let the dish sit out for 30 minutes to come to room temperature before cooking.
  • Place the dish on a baking sheet to catch any drips. Bake until it is puffed, golden brown, and cooked through in the middle, around 55 to 60 minutes or until a thermometer inserted in the center reads 160°F. If needed, cover loosely with foil and bake for an additional 5 to 10 minutes.
  • Allow the casserole to rest: Allow the casserole to sit for 5 minutes before slicing into squares.
