Baked eggs with prosciutto

Elevate a classic 'bacon n eggs' with a golden baked egg dish, crowned with crispy prosciutto.
Ingredients:
  • 6 slices prosciutto, roughly chopped
  • 62.50 ml finely chopped semi-dried tomatoes
  • 50g feta, crumbled
  • 62.50 ml finely grated parmesan cheese
  • 40.00 ml chopped fresh basil leaves
  • 8 eggs
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and lightly grease four 3/4-cup capacity ovenproof ramekins.
  • Arrange the prosciutto slices on a greased baking tray and bake until perfectly crisp, about 5 minutes.
  • Mix together the prosciutto, tomatoes, feta, parmesan, and basil in a bowl. Divide half of the mixture among the ramekins. Crack 2 eggs into each ramekin. Finish by topping with the remaining prosciutto mixture.
  • Bake until eggs are perfectly set, about 12 minutes. Serve and enjoy!
