Delicious summer appetizer: Baked feta and tomatoes with sweet & salty flavors. Pair with crusty bread, pita chips, or crackers.
Ingredients:
  • 1 (7-oz) block of Greek feta cheese
  • 1 tablespoon honey
  • drizzle of olive oil
  • 1-1/2 cups halved cherry or grape tomatoes
  • 1/3 cup halved Kalamata olives
  • 1/3 cup thinly sliced red onion
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • salt and freshly ground black pepper to taste
  • chopped fresh basil for garnish (optional)
Instructions:
  • Preheat the oven to a toasty 400°F (200°C).
  • In the center of a baking dish, position the feta cheese, and generously coat it with honey before drizzling with olive oil.
  • Combine juicy tomatoes, briny olives, sharp red onion, flavorful olive oil, and aromatic garlic in a bowl. Sprinkle with fragrant oregano, season generously with salt and pepper, then mix everything together. Place the tomato mixture artfully around the creamy feta cheese.
  • Bake in the hot oven until cheese is melted and tomato mixture is bubbling, 20 to 30 minutes. For extra color, briefly broil.
  • If desired, top with fragrant fresh basil and serve warm.
