Easy and aromatic Mediterranean traybake - simply pop in the oven and enjoy!
Ingredients:
  • 250 g feta cheese
  • 500 g mixed tomatoes
  • 1 handful of kalamata olives (stone in)
  • 200 g sourdough
  • ½ bunch of fresh basil
Instructions:
  • Preheat the oven to 180ºC/gas 4. Break the feta into large chunks, roughly chop some tomatoes (keep some whole), remove olive stones, tear sourdough, and pick basil leaves. Mix feta, tomatoes, olives, sourdough, and a splash of oil in a tray. Season, bake for 30 minutes until tomatoes are tender and feta is golden. Top with basil before serving.
