Try this irresistible baked feta dip with sautéed spinach and sundried tomatoes. Perfect for sharing with warm pita bread at your next gathering.
Ingredients:
  • 1 tablespoon Butter
  • 1 Cup Fresh Spinach
  • 1/3 Cup Sundried Tomatoes
  • 12 ounces Feta Cheese Crumbles
  • 1/2 Cup Sour Cream
  • 1/2 Cup Mayonnaise (not salad dressing)1 Cup Fresh Spinach
  • 1/3 Cup Sun Dried Tomatoes
  • 1/2 Cup Cherry Tomatoes, halved (optional)
  • 1/3 Cup chopped Olives (optional)
  • 1 tablespoon dried oregano
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a cast iron skillet, melt the butter until sizzling. Add the spinach and sundried tomatoes, cooking until the spinach is just wilted, approximately 3 minutes. Take the skillet off the heat.
  • Combine crumbled feta cheese, creamy sour cream, and rich mayonnaise in a spacious bowl, then gently fold in the savory spinach mixture. Transfer the decadent mixture into an oven-safe dish.
  • Bake in the preheated oven for about 20 minutes until melted and hot in the center, with a beautifully golden top and edges.
  • 1. Preheat a cast iron pan over medium-high heat. Sear tomatoes until blistered, about 3 minutes, stirring occasionally. Remove from heat, mix in olives, and spoon over feta dip. Garnish with herbs and serve with pita bread.
