Zesty oven-baked meatballs with feta, lemon pepper, and oregano. Perfect with tzatziki dip or in pita bread for a quick and delicious meal.
Ingredients:
  • 1 lb ground pork
  • 1 egg
  • 1/2 cup Progresso™ plain panko bread crumbs
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons chopped red onion
  • 1 1/2 teaspoons lemon pepper seasoning
  • 1 1/2 teaspoons dried oregano leaves
  • 1 cup Mountain High™ whole milk plain yoghurt
  • 1/3 cup grated fresh cucumber
  • 1 tablespoon chopped fresh dill weed
  • 1 tablespoon lemon juice
Instructions:
  • Preheat the oven to 400°F and prepare a 15x10x1-inch pan by lining it with foil and spraying it with cooking spray.
  • Combine all meatball ingredients in a large bowl until fully mixed. Shape the mixture into 20 meatballs using a rounded tablespoon measure and place them in a baking pan. Bake for 15 to 18 minutes until the meatballs are no longer pink in the center and reach an internal temperature of at least 165°F.
  • In a small bowl, combine yogurt with grated cucumber, dill, lemon juice, and salt. Stir well and refrigerate until serving with meatballs.
