Feta dip with herb and garlic toasts

Irresistible feta dip perfect for any gathering.
Ingredients:
  • 180g goat's milk feta, crumbled
  • 60ml (1/4 cup) olive oil
  • 2 garlic cloves, crushed
  • 60ml (1/4 cup) milk
  • 36.40 gm olive oil, extra
  • 20.00 ml chopped fresh continental parsley
  • 1 tsp finely chopped fresh rosemary
  • 1 tsp finely chopped fresh thyme
  • 1 baguette (French stick), cut crossways \tinto 1cm-thick slices
Instructions:
  • In a food processor, combine feta, oil, and half of the garlic. Blend until smooth. While blending, slowly pour in the milk until a thick, smooth paste forms.
  • In a saucepan over medium heat, combine the additional oil, leftover garlic, parsley, rosemary, and thyme. Stir and cook for 2 minutes, or until fragrant. Remove from heat and set aside.
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Brush a baguette with herb and garlic oil, then place it on the tray. Bake for about 7 minutes or until golden brown.
  • Transfer the feta dip into a charming small bowl, then present alongside herb and garlic toasts.
