Savor the flavors of Greece with a herb-infused dip featuring olives, juicy tomatoes, and creamy feta.
Ingredients:
  • 2 x 200g tubs tzatziki
  • 1 small red capsicum, diced
  • 1 small green capsicum, diced
  • 1 Lebanese cucumber, quartered lengthways, chopped
  • 250g mini roma tomatoes, quartered
  • 1/4 small red onion, finely chopped
  • 62.50 ml fresh oregano leaves
  • 82.50 ml fresh flat-leaf parsley leaves
  • 100g fetta, crumbled
  • 62.50 ml pitted kalamata olives
  • 2 tsp red wine vinegar
  • Extra virgin olive oil, to serve
  • Toasted pita bread, to serve
Instructions:
  • Evenly coat a serving platter with creamy tzatziki. Layer with vibrant capsicum, crisp cucumber, juicy tomato, and zesty onion.
  • Sprinkle oregano, parsley, feta, and olives. Drizzle with vinegar, season with salt and pepper, drizzle with oil, and serve with bread.
