Elevate your summer cookout with delicious Greek burgers featuring fresh herbs, spinach, roasted red peppers, and a zesty feta spread.
Ingredients:
  • 2 ounces crumbled feta cheese
  • 2 tablespoons mayonnaise
  • 2 teaspoons lime juice
  • 1 sprig fresh mint, chopped
  • 1 sprig fresh parsley, chopped
  • 1 medium red bell pepper
  • 1 pound lean ground beef
  • 8 ounces fresh spinach - rinsed, drained and coarsely chopped
  • 6 ounces crumbled feta cheese
  • 0.25 cup bread crumbs
  • 0.25 cup chopped onion
  • 1 large egg, beaten
  • 1 clove garlic, minced
  • 3 sprigs fresh mint, coarsely chopped
  • 2 sprigs fresh basil, coarsely chopped
  • 2 sprigs fresh parsley, coarsely chopped
  • 4 Kaiser rolls, split and toasted
  • 1 medium tomato, sliced
  • 4 leaves lettuce
Instructions:
  • Prepare the spread by combining feta cheese, mayonnaise, lime juice, mint, and parsley in a small bowl. Keep it aside for later use.
  • Prepare the burgers: Preheat the broiler in the oven, positioning the rack 6 inches from the heat source, and cover a baking sheet with aluminum foil.
  • Halve the bell pepper lengthwise, removing the stem, seeds, and ribs. Arrange the peppers cut side down on the baking sheet.
  • Place the peppers under the broiler until the skin is blackened and blistered, approximately 5 minutes. Then, transfer the pepper halves to a paper bag to cool and steam for another 5 minutes.
  • Heat up your outdoor grill to medium temperature and lightly oil the grate.
  • Peel off and discard the skin of the bell pepper, then chop the flesh and transfer it to a large bowl.
  • Combine ground beef, spinach, feta, bread crumbs, onion, egg, garlic, mint, basil, parsley, salt, and pepper, gently mixing with your hands until well combined. Shape mixture into four 4 1/2-inch patties.
  • Grill the burgers to your liking, approximately 4 minutes per side for medium, until the internal temperature reaches 160°F (70°C) when checked with a thermometer.
  • Assemble burgers on warm rolls with decadent feta cheese spread, ripe tomatoes, and crisp lettuce.
