Whipped feta dip with figs, honey, and pistachios. Perfect for parties or as part of a dip platter.
Ingredients:
  • For the fig-pistachio-honey topping
  • 2 tablespoons honey, plus more for drizzling
  • 1/4 cup roasted and unsalted pistachios, finely chopped
  • 1/4 cup finely chopped dried figs
  • 2 tablespoons water
  • For the feta dip
  • 8 ounces feta cheese in brine, drained and crumbled
  • 4 ounces cream cheese, at room temperature
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon fresh mint leaves, minced
  • 1 small clove of garlic, grated or finely minced
  • 1/8 teaspoon salt
  • 1/4 teaspoon black pepper
  • For serving
  • Warmed pita bread, naan, or crackers
Instructions:
  • Prepare the fig-pistachio-honey topping: Combine honey, pistachios, figs, and water in a small bowl. Microwave for 30 seconds until the mixture starts bubbling. Let it cool to room temperature. Alternatively, cook the mixture on the stovetop by combining all ingredients in a small saucepot over medium heat. Simmer the mixture, then let it cool.
  • Prepare the whipped feta by adding crumbled feta, cream cheese, olive oil, mint, garlic, salt, and pepper to a food processor. Pulse for 30 seconds to 1 minute until smooth and creamy with small feta bits remaining.
  • Adjust seasonings to taste by adding salt and black pepper, and for a milder flavor, optionally incorporate 2 ounces of cream cheese.
  • To present the dip: Place the feta dip in a wide, shallow serving bowl. Use the back of a spoon to create decorative swirls. Make a well in the middle and spoon the fig-pistachio-honey mix on top. Drizzle with extra honey if desired. Serve with warm pita bread, naan, or crackers.
