Baked fish fillets

Nutritious low-fat fish fillets elevated with healthy vegetables.
Ingredients:
  • 2 green onions
  • 1 red capsicum
  • 1 carrot
  • 4 thick white fish fillets, (see note)
  • 65.63 gm reduced-salt soy sauce
  • Steamed white rice or cooked noodles, to serve
Instructions:
  • Preheat the oven to 200°C. Cut the onions into 5cm lengths, remove the seeds from the capsicum, and peel the carrot. Finely shred all the vegetables and toss them together in a bowl until well combined.
  • Line a baking dish with baking paper, then add the fish fillets. Top the fillets with shredded vegetables, drizzle on some soy sauce, and season with salt and pepper.
  • Cover the fish with another sheet of baking paper, folding all sides to form a parcel. Bake in the oven for 12 to 15 minutes, or until the fish easily flakes with a fork. Serve alongside rice or noodles.
