Baked Fish with Parmesan Breadcrumbs

Try this quick and delicious flounder with Parmesan breadcrumbs for a vacation dinner. Easy to make and loaded with cheesy goodness for everyone to enjoy!
Ingredients:
  • Butter (for the baking dish)
  • Salt and pepper, to taste
  • 6 sprigs parsley
  • 3 slices (1/4-inch thick) white sandwich bread, cut or torn into 1-inch pieces
  • 1 cup (2 1/2 ounces) shredded Parmesan Cheese
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 1/2 pounds flounder fillets, or other mild fish
  • 1 to 2 lemons, cut into wedges (for garnish)
Instructions:
  • Preheat the oven to 425°F and generously butter a large (9- by 13-inch) baking dish.
  • Season the fish generously on both sides with a sprinkle of salt and pepper. Arrange them in the baking dish, slightly overlapping the fillets to ensure a perfect fit.
  • Prepare the breadcrumb topping by pulsing parsley leaves in a food processor until well chopped. Add bread and pulse until it forms soft, coarse crumbs. Add Parmesan cheese and pulse to mix. Include melted butter, olive oil, salt and pepper, then pulse until mixed. If using prepared breadcrumbs, chop parsley and mix with breadcrumbs. You can also chop Parmesan cheese and combine with breadcrumbs.
  • Place a generous layer of breadcrumbs over the fish, ensuring an even spread. Bake in the oven for 12-15 minutes until the fish is opaque in the center and the breadcrumbs turn golden. Use an instant-read thermometer to confirm the center reaches 135F. If the breadcrumbs need more browning, briefly broil for about a minute while keeping a close eye on them to prevent burning.   • Present the dish: Divide the fish into portions using a sharp knife, ensuring each piece is separate. Place the portions on plates and garnish with lemon wedges before serving.
