Elevate weeknight dinner with a crispy, flavorful parmesan-crusted fish.
Ingredients:
  • 165.00 ml dried breadcrumbs
  • 62.50 ml finely grated parmesan cheese
  • 40.00 ml flat-leaf parsley leaves, chopped
  • 82.50 ml plain flour
  • 1 egg, lightly beaten
  • 4 (180g each) white fish fillets, boneless
  • Olive oil cooking spray
  • 60g salad leaves, to serve
  • 165.00 ml plain yoghurt
  • 5.90 gm Dijon mustard
  • 20.00 ml capers, drained, finely chopped
  • 1 gherkin, finely chopped
Instructions:
  • Preheat your oven to 220C and prepare a large baking tray by lining it with baking paper.
  • Toast breadcrumbs in a non-stick pan over medium-high heat for about 3 minutes until golden. Transfer to a dish to cool, then mix in parmesan and parsley. Set up shallow dishes with flour in one and egg in the other.
  • Season the fish with a sprinkle of salt and pepper. Dredge each piece of fish in flour, dip in egg, and coat with breadcrumbs. Transfer to a baking tray and lightly spray with oil. Bake for 15 to 20 minutes until fully cooked.
  • Create a flavorful yoghurt tartare by combining yoghurt, mustard, capers, gherkin, salt, and pepper in a bowl. Mix until well combined.
  • Plate the fish and season with a sprinkle of salt. Accompany with fresh salad leaves and creamy yogurt tartare.
