Delicious and nutritious baked fish with Asian veggies for a wholesome family dinner.
Ingredients:
  • 2cm piece fresh ginger, peeled, grated
  • 22.00 gm sweet chilli sauce
  • 42.00 gm reduced-salt soy sauce
  • 40.00 ml mirin
  • 4 (180g each) snapper fillets, skin removed
  • 2 green onions, thinly sliced
  • 1 lemon, thinly sliced
  • 450g butternut pumpkin, peeled, cut into 1cm-thick slices
  • 2 bunches baby bok choy, halved
Instructions:
  • Preheat the oven to 220°C. In a small bowl, combine ginger, garlic, sweet chilli sauce, soy sauce, and mirin, whisking until well mixed.
  • Cut four 40cm lengths of foil. Place a fish fillet in the center of each foil piece. Drizzle marinade over each fillet, then add onions and lemon slices. Fold and seal foil to make parcels. Bake on a tray for 15-20 minutes until fish is perfectly cooked.
  • Fill a wok one-third of the way with water and bring it to a boil. Place the pumpkin in a steamer basket, cover, and steam over the simmering water for about 10 minutes until almost tender. Then, add the bok choy and continue steaming both vegetables for an additional 5 minutes until tender.
  • Unwrap the fish from the parcels and transfer it to shallow bowls. Drizzle any released juices over the fish. Accompany with steamed pumpkin and bok choy for serving.
