Baked fish with tomatoes, olives and capers

Prepare a quick and delicious baked fish dish with olives, tomato, and capers, ready in just 15 minutes.
Ingredients:
  • 4 x 175g ling fish fillets (or other firm skinless white fish such as blue-eye or snapper), skin removed
  • 250g cherry tomatoes, halved
  • 100g pitted kalamata olives
  • 40.00 ml capers, rinsed, drained
  • 4 thyme sprigs
  • 36.40 gm extra virgin olive oil
  • 1-40.00 ml balsamic vinegar
  • 500.00 ml mixed salad leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Arrange the fish in a roasting pan, top with tomatoes, olives, capers, and thyme sprigs. Drizzle with olive oil, season with salt and pepper. Bake for 15 minutes. Rest covered with foil for 5 minutes before serving.
  • Arrange the fish, tomatoes, and olives on 4 warmed plates. Mix the vinegar with the pan juices and drizzle over the fish. Serve alongside fresh salad leaves.
