Indulge in a decadent twist on mac and cheese by swapping out macaroni for pillowy potato gnocchi, creating a rich and creamy comfort dish.
Ingredients:
  • 1 (16 ounce) package potato gnocchi
  • 3 tablespoons butter, divided
  • 1.5 tablespoons all-purpose flour
  • 1.25 cups milk
  • 2 tablespoons heavy cream
  • 0.5 teaspoon ground black pepper, or to taste
  • 0.75 cup shredded Cheddar cheese, divided
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup panko bread crumbs
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Bring a pot of salted water to a gentle boil. Cook gnocchi until they float, which usually takes 2 to 4 minutes. Drain and set aside.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease a 1 1/2- to 2-quart casserole dish.
  • In a saucepan over medium heat, melt 2 tablespoons butter. Stir in flour until it's incorporated and looks foamy, for about 1 to 2 minutes. Add milk, cream, salt, and pepper, and stir constantly until the mixture thickens and gently bubbles, for about 5 to 10 minutes. Finally, mix in 1/2 cup Cheddar cheese and mozzarella.
  • - Add gnocchi to the casserole dish and top with cheese mixture. - Combine bread crumbs and 1 tablespoon of melted butter in a small bowl; sprinkle over the casserole. - Finish by adding the rest of the Cheddar and Parmesan cheese on top.
  • Bake until the top turns golden brown and the cheese is melty and bubbling, approximately 20 minutes in the preheated oven.
