Baked goat cheese with cherry tomatoes, basil, olive oil, and spices for a delicious warm appetizer served with crostini or crackers.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 3 tablespoons basil chiffonade (thinly sliced fresh basil leaves), divided
  • 1 (4 ounce) log of fresh goat cheese, halved
  • 16 cherry tomatoes, cut in half on the diagonal
  • freshly ground black pepper to taste
  • 1 pinch cayenne pepper, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Begin by pouring 1 1/2 teaspoons of olive oil into each 6-ounce ramekin, followed by a sprinkling of 1 tablespoon of basil over the oil. Add one piece of goat cheese on top of the basil in each ramekin and arrange sliced cherry tomatoes around it. Season with cracked black pepper and cayenne. Finish by spreading 1 1/2 teaspoons of basil over each portion, placing ramekins on a baking sheet, and drizzling each serving with another 1 1/2 teaspoons of olive oil.
  • Place in the preheated oven and bake until bubbly, approximately 15 minutes. Serve while still warm.
