Delicious cheese and tomato dip with fresh veggies and bread cubes – the ultimate appetizer.
Ingredients:
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped (1/3 cup)
  • 2 cloves garlic, finely chopped
  • 2 tablespoons tomato paste
  • 1/4 teaspoon crushed red pepper flakes
  • Dash sugar
  • 1 can (14.5 oz) petite diced tomatoes, undrained
  • 1/4 cup chopped sun-dried tomatoes in oil
  • 1/4 cup torn fresh basil leaves
  • Salt and pepper to taste
  • 2 logs (4 oz each) goat cheese, softened
  • 1 package (8 oz) cream cheese, softened
  • Assorted cut vegetables and bread cubes, if desired
Instructions:
  • Preheat the oven to 350°F and generously coat a 9-inch quiche dish, glass pie plate, or shallow baking dish with cooking spray.
  • In a 3-quart saucepan, heat oil over medium-high heat. Sauté onion for 5 minutes until tender. Add garlic, tomato paste, pepper flakes, and sugar. Cook for 1 minute, stirring constantly. Mix in diced and sun-dried tomatoes. Simmer over medium-low heat for 10 minutes until very thick, stirring occasionally. Remove from heat and stir in basil, salt, and pepper.
  • Combine goat cheese and cream cheese in a medium bowl until smooth. Spread this mixture in a quiche dish and then top it with the tomato mixture.
  • Place in the oven for 15 to 18 minutes or until piping hot. Serve the dip warm alongside fresh vegetables and bread cubes.
