Tangy orange and zesty ginger add a delicious kick to juicy lamb chops.
Ingredients:
  • 680g pumpkin
  • Olive oil cooking spray
  • 8 lamb loin chops, trimmed
  • 330.00 gm orange marmalade
  • 65.63 gm orange juice
  • 2cm piece ginger, peeled, finely grated
  • 175g baby green beans, trimmed, steamed
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with baking paper, then arrange the pumpkin wedges on the tray. Spray them with oil and season with salt and pepper before baking for 15 minutes.
  • Place the chops in a large ovenproof baking dish. Mix together marmalade, orange juice, and ginger in a bowl. Season with salt and pepper. Spoon the mixture over the chops, making sure to coat them well. Bake both the chops and the pumpkin in the oven for an additional 35 minutes, or until the chops are fully cooked and the pumpkin is golden and tender. Serve the chops on plates, drizzled with the pan juices, along with the pumpkin and beans.
