Zesty lemon chicken with creamy mushroom sauce for a simple and flavorful weeknight dish.
Ingredients:
  • 1 tablespoon olive oil
  • 6 skinless, boneless chicken breast halves
  • 1 lemon
  • 0.25 cup butter
  • 3 cups fresh sliced mushrooms
  • 0.5 cup chicken broth, or more as needed
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C).
  • In an 8x8-inch glass baking dish, generously coat the chicken breasts with olive oil on both sides. Squeeze half a lemon over the chicken and top each piece with a lemon slice.
  • Roast in the oven until perfectly cooked through and clear juices flow, for about 30 to 40 minutes. Use an instant-read thermometer to ensure the center reaches 165 degrees F (74 degrees C).
  • In a skillet over medium heat, melt butter. Add mushrooms and cook until browned and liquid has evaporated, about 6 minutes. Sprinkle flour over mushrooms and stir to coat. Pour in chicken broth, stirring to create a medium-thick sauce. Let sauce reduce, adjusting with more broth for desired creaminess. Stir in fresh parsley right before serving. Drizzle sauce over baked chicken breasts.
