Effortlessly bake Mexican rice in the oven for a hands-off cooking experience, freeing you up to focus on other parts of your meal.
Ingredients:
  • 1.5 cups parboiled rice (such as Uncle Ben's®)
  • 2 tablespoons canola oil
  • 1 green bell pepper, finely chopped
  • 0.5 onion, finely chopped
  • 2 large green onions, sliced
  • 1 (.18 ounce) packet sazon seasoning with saffron (such as Goya® Azafran)
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon salt, or more to taste
  • 1.5 cups water
  • 0.75 cup tomato sauce
  • 2 tablespoons minced fresh cilantro
  • 1 lime, cut into wedges
Instructions:
  • Heat your oven to a toasty 400°F (200°C).
  • Spread the rice evenly in a 9-inch square baking dish. Drizzle with canola oil and mix well to ensure all the rice is coated. Add green pepper, onion, and green onions, then sprinkle with sazon seasoning, cumin, garlic powder, coriander, and salt.
  • In a microwave-safe bowl or measuring cup, mix water and tomato sauce. Microwave until simmering, approximately 2 minutes. Pour over the rice and gently mix. Cover the baking dish securely with heavy-duty aluminum foil.
  • After baking in the cozy oven for 30 minutes, allow it to rest under cover for 5 minutes. Unveil the delicious dish and gently fluff it with a fork. Sprinkle in fresh cilantro and generously squeeze zesty lime juice over the top.
