Elevate your meal with a quick and delicious Italian side of baked potato mixed with broccoli, carrots, and cauliflower, seasoned with garlic-herb cheese. Ready in just 25 minutes!
Ingredients:
  • 4 large baking potatoes (12 ounces each)
  • 1 bag (16 ounces) frozen broccoli, carrots and cauliflower
  • 1/4 cup milk
  • 1 container (5 ounces) garlic-and-herb spreadable cheese
  • Chopped red bell pepper, if desired
Instructions:
  • Pierce potatoes, place them 1 inch apart in a circle on a paper towel in the microwave, and cook on High for 10 to 12 minutes until tender.
  • While the potatoes are cooking, bring water to a boil in a 2-quart saucepan. Add the vegetables, then lower the heat to medium. Cover and simmer for 3 to 7 minutes, stirring occasionally, until they are tender. Drain the vegetables.
  • Blend milk into cheese until velvety. Fold cheese blend into vegetables until melted. Score tops of potatoes in a crisscross pattern; gently press to open. Pile onto baked potatoes. Garnish with diced bell pepper.
