Indulgent baked queso dip with Velveeta, creamy cheese blend, savory gouda, and seasoned beef. Perfect appetizer for Mexican feasts.
Ingredients:
  • 0.5 pound ground beef
  • 0.5 red onion, chopped
  • 4 cloves minced garlic
  • 1 (1 ounce) packet taco seasoning
  • 1 (14 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 8 ounces processed cheese food (such as Velveeta®), cubed
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 4 ounces Gouda cheese
  • 1 jalapeno pepper, seeded and minced
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup half-and-half, or more as needed
Instructions:
  • Heat the oven to 375°F (190°C).
  • In a skillet over medium-high heat, sauté ground beef, red onion, and garlic until the beef is browned and crumbly, approximately 5 minutes.
  • Remove any extra liquid from the skillet, then generously season with flavorful taco seasoning, ensuring every ingredient is well-coated.
  • Combine cooked ground beef, diced tomatoes, Velveeta cheese, cream cheese, Gouda, jalapeno, and cilantro in an oven-safe dish.
  • Drizzle a portion of the half-and-half on top, leaving some aside to adjust the thickness later.
  • Place in the oven for 20 minutes, then take it out to stir and add half-and-half to reach desired thickness. Put it back in the oven until the cheese is bubbly, around 15 minutes more.
