Baked ricotta orecchiette with blistered tomatoes, veggies, and herbs - perfect for dinner parties.
Ingredients:
  • 1 pound cherry tomatoes
  • 1 cup chopped zucchini
  • 1 medium bell pepper, chopped
  • 0.5 medium red onion, chopped
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 tablespoon chopped fresh oregano
  • 3 cloves garlic, crushed and chopped
  • 4 tablespoons extra-virgin olive oil, divided, or as needed
  • 1 pinch red pepper flakes, or to taste
  • sea salt and cracked black pepper to taste
  • 1 (15 ounce) container whole-milk ricotta cheese
  • 1 (16 ounce) package dried orecchiette
  • 4 sprigs fresh thyme, leaves stripped
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley
  • 0.5 medium lemon, juiced
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a large 3-quart baking dish, mix cherry tomatoes, zucchini, bell pepper, onion, sun-dried tomatoes, oregano, and garlic. Drizzle with 2 tablespoons of olive oil and season generously with pepper flakes, sea salt, and black pepper. Stir well to coat. Create a well in the center of the dish and add ricotta cheese. Drizzle the ricotta with more olive oil and sprinkle with an extra pinch of pepper flakes, salt, and black pepper.
  • Bake in the preheated oven for 40 minutes, then broil at 500°F (260°C) for 2-4 minutes until nicely blistered and browned.
  • Bring a generously salted large pot of water to a boil. Add orecchiette and cook until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta water before draining.
  • Transfer the baked ricotta dish from the oven to a wire cooling rack.
  • 1. Sprinkle in fragrant thyme leaves and gently mix the ricotta to create a creamy texture. 2. Incorporate vibrant fresh basil, parsley, and a splash of zesty lemon juice. 3. If necessary, pour in the reserved pasta water to achieve the perfect consistency. 4. Taste and season with salt to your liking. 5. Fold in the orecchiette until every piece is coated in the delicious mixture. 6. Present and enjoy your flavorful creation.
