Ingredients:
  • 1/2 cup pesto
  • 3 tablespoons lemon juice
  • 1 medium carrot, finely chopped (1/2 cup)
  • 1 medium leek, chopped
  • 1 drawn rockfish or red snapper (2 pounds)
Instructions:
  • Preheat the oven to 375°F and generously grease a 13x9x2-inch rectangular baking dish.
  • Combine the vibrant pesto, zesty lemon juice, crunchy carrot, and flavorful leek. Arrange the fish in a dish and generously layer it with the vegetable mixture.
  • Bake the dish covered for approximately 40 minutes, or until the fish easily flakes with a fork.
