Baked rockfish with spinach, tomatoes, onion, garlic, dill, and lemon - a one-dish flavor sensation!
Ingredients:
  • 5 cups fresh spinach
  • 2 (6 ounce) fillets rockfish
  • 10 cherry tomatoes, halved
  • 0.5 cup vegetable broth
  • 2 tablespoons minced fresh dill
  • 0.5 teaspoon lemon pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 2 slices lemon slices
  • 2 slices onion slices
  • 1 teaspoon butter
Instructions:
  • Collect all the ingredients needed and preheat the oven to 400°F (200°C).
  • First, elegantly arrange a bed of fresh spinach at the base of a 2-quart baking dish. Next, delicately place the rockfish on top of the spinach and artfully scatter tomatoes around the fish. Carefully pour in the broth and generously season the rockfish with dill, lemon pepper, garlic powder, onion powder, salt, and pepper. Enhance the flavors further by laying a slice of lemon and onion on each fillet, then crown with a pat of butter. Finally, cover the dish with foil to encapsulate all the mouthwatering flavors as they meld together during cooking.
  • Cook the fish in a preheated oven until it easily flakes with a fork, for 20 to 25 minutes.
