Baked Salmon with Wasabi Sauce

Spicy Wasabi Baked Salmon ready in 30 minutes.
Ingredients:
  • 4 salmon fillets
  • 1 1/4 teaspoons salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup loosely packed fresh cilantro
  • 1 clove garlic, finely chopped
  • 1 tablespoon grated gingerroot
  • 2 to 3 teaspoons wasabi powder or paste
  • 3 tablespoons lime juice
  • 1/2 teaspoon sugar
  • 1/4 cup sliced green onions
Instructions:
  • Preheat oven to 400°F and lightly coat a cookie sheet with cooking spray. Lay the salmon skin side down on the prepared sheet, season with 1 teaspoon of salt and pepper, and drizzle with oil.
  • Bake until salmon flakes easily with a fork, about 15 to 20 minutes.
  • Add mayonnaise, cilantro, garlic, gingerroot, wasabi powder, lime juice, sugar, and remaining 1/4 teaspoon salt to a food processor. Pulse on and off until cilantro is finely chopped.
  • Plate the salmon individually, generously spoon on the zesty wasabi sauce, and garnish with a generous sprinkle of onions.
