Baked Satay Burgers

Thai satay transformed into a delicious American burger fusion.
Ingredients:
  • 1 1/4 lb ground chicken or turkey
  • 4 flatbreads
  • Lettuce leaves
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons reduced-sodium soy sauce
  • 2 tablespoons creamy peanut butter
  • Dash red pepper sauce
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon creamy peanut butter
  • 1 teaspoon grated gingerroot
Instructions:
  • Separate the chicken into 4 equal portions and shape each portion into a patty, being careful not to overwork the meat. Place the patties in a large resealable plastic bag for storage.
  • Whisk marinade ingredients in a small bowl. Pour over patties in a bag, seal, and coat evenly. Refrigerate for at least 30 minutes to marinate.
  • In a separate small bowl, combine the sauce ingredients. Cover and refrigerate until ready to serve.
  • Preheat oven to 375°F. Line a cookie sheet with nonstick foil or regular foil sprayed with cooking spray. Place the marinated patties on the sheet. Bake for 30 minutes, flipping halfway, until the internal temperature reaches at least 165°F.
  • Place juicy burgers on top of warm, soft flatbreads. Layer with crisp lettuce and generously drizzle with savory sauce.
