Make-ahead freezer-friendly meal for easy future dinners, saving time and effort for yourself.
Ingredients:
  • 195.00 gm smooth peanut butter
  • 83.33 gm coconut milk
  • 68.75 gm Thai sweet chilli sauce with ginger
  • 2 garlic cloves, crushed
  • 84.15 gm chicken style liquid stock
  • 21.00 gm lime juice
  • 1kg pork scotch steaks, thinly sliced
  • Cooked frozen stir-fry vegetables, to serve
  • Chopped fresh coriander leaves, to serve
  • Chopped toasted peanuts, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and line a large baking tray with baking paper.
  • Mix together peanut butter, coconut milk, chili sauce, garlic, stock, and lime juice in a bowl. Skewer pork onto 16 skewers. Lay out 8 skewers on a prepared tray. Drizzle half of the peanut butter mixture over the skewers. Save the rest of the skewers and peanut butter mixture for freezing according to the provided instructions.
  • Bake skewers until pork is cooked through, for about 20 to 25 minutes. Serve with delicious stir-fried vegetables, fresh coriander, and crunchy peanuts on the side.
