Indonesian Pork Satay

Grilled pork skewers with zesty ginger-peanut marinade - a flavorful Southeast Asian delight.
Ingredients:
  • 2 cloves garlic
  • 0.5 cup chopped green onions
  • 1 tablespoon chopped fresh ginger root
  • 1 cup roasted, salted Spanish peanuts
  • 2 tablespoons honey
  • 0.5 cup soy sauce
  • 2 teaspoons crushed coriander seed
  • 1 teaspoon red pepper flakes
  • 0.5 cup chicken broth
  • 0.5 cup melted butter
  • 1.5 pounds pork tenderloin, cut into 1 inch cubes

Instructions:
  • Combine garlic, green onions, ginger, peanuts, lemon juice, honey, soy sauce, coriander, and red pepper flakes in a food processor. Blend until nearly smooth. Add broth and butter, then blend once more.
  • Place the pork cubes in a spacious resealable plastic bag and pour the mixture over them. Marinate in the refrigerator for 6 hours or overnight.
  • Preheat the grill to medium heat. Skewer the pork cubes after removing them from the bag. Boil the marinade in a saucepan for 5 minutes. Keep a bit of the marinade for basting and set the rest aside as a dipping sauce.
  • Brush the preheated grill with a touch of oil. Grill the dish for 10 to 15 minutes until nicely browned, flipping and basting regularly with the leftover marinade. Serve with a side of dipping sauce.
